OUCH!
Carrot Cake
This is my favorite Carrot Cake recipe. I just made it yesterday and it didn't turn out as well because I had to make a few substitutions, and I think it works better in 2 round pans. But, if you follow the real recipe, it turns out beautiful. I love how it has pineapple in it and carrot baby food instead of shredded carrots. Crazy! but soooo good!
2 cups flour
2 cups sugar
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
1 1/2 cup vegetable oil
4 eggs
2 jars stage 3 baby food carrots (6 oz. each)
1 can crushed pineapple, drained (8 oz.)
1/2 cup chopped walnuts
Combine the dry ingredients. Add oil, eggs, and baby food. Mix on low speed. Stir in pineapple and nuts. Pour into 2 round, greased and floured pans. Bake at 350 degrees for 35 to 40 minutes, until toothpick comes out clean. Cool for 10 minutes, then remove from pans to cool completely. Frost with your favorite cream cheese or butter cream frosting. Store in refrigerator.

I Had a Dream
The background for this dream is that Jane watches the wiggles at least twice a day. So in my dream we're watching the Wiggles, and Dorothy the Dinosaur comes out without her costume on. It's just this 45 year old woman doing Dorothy like actions and dances. I was so confused in my dream (as I always am since they never make sense) as to how they didn't notice when taping that she didn't have the large dinosaur costume on. My beef is this: Why can't I dream about a nice relaxing vacation where I am lounging at the beach? If I can't take a nice vacation like that, at least I should dream about it instead of waking up a little stressed out about Dorothy the Dinosaur. If only I could choose my dreams!

Happy Valentine's Day! (The Mega-Post)

Thanks for the aprons Laura! Jane insists we wear them around our necks. It also makes a good nursing cover for Jane to nurse her baby under!
Which one of these things is not like the other? Which one of these things just does not belong? But we have to leave one un-iced always. Jeff thinks that's the perfect cookie!
I have some pretty good Valentine's memories. One is the Valentine's that my wonderful Dad gave me a bag of Reese's Peanut Butter Cups and Valentine's treats every day in my lunch during that week. The funny part about this Valentine's was that he gave Sarah a big red bowl with a package of Doritos, and he gave my mom a big red dog pinata (with no candy inside)! His thinking was it was red, so it should be a Valentine's gift! Another funny Valentine's memory was my first Valentine's dating Jeff. He gave me chocolates and flowers and I was so mad. Doesn't every boy know that it needs to be chocolates, flowers, AND a present? I know, I was a little bratty. Also I was disappointed b/c I thought for some reason that he was going to propose to me. I don't know why since we hadn't talked about marriage and he hadn't told me he loved me yet, but what can I say, we were living in Provo. This Valentine's Day isn't over, so will it top these other two? Jeff has already given me flowers and I already gave myself chocolates (I can't leave it up to him to pick out the good ones!). So will he pull through with an amazing gift too?

Potty Training Jane, Day #6
I can't even believe it, but I think Jane is potty trained! Yesterday and today she has been going potty by herself! Yesterday morning she said, "Mommy, I pee" and then I found her on the potty! I am seriously so amazed that she did it. I can only think it has been a miracle. I know all you experienced moms out there already know that this is how it goes, but I can't believe my baby Jane is such a big girl. We even braved going out yesterday and to church today and she was fine!!! I think I am mostly glad that I won't have anymore potty training blogs!!

Potty Training Jane, Day #4
Yesterday was terrible, I can't even write about it. But today was unbelievable - NO ACCIDENTS!!! This is b/c I made Jane sit on the potty (usually crying) about every three hours, but it worked. Eventually maybe she will tell me she needs to go, and then one day she might even go on her own. I can see a glimpse of light at the end of this tunnel!
